Pesto

Chop in the food processor until coarsely ground:

Add:
- 8 cups basil leaves, washed and dried in a salad spinner
- 1 cup of olive oil
- 1 cup of pine nuts
- 3 cloves of garlic
- Pepper to taste
- 1 teaspoon de salt
- Blend until smooth, stirring down a few times.
N.B. I bought 700g of basil from Mercado San Juan and it made 3 batches or more than 4 half-quart jars.
