Mochi Cake
Ingredients
1 cup sweet white rice flour
1 cup sugar
1 teaspoon baking powder
13 oz can full-fat coconut milk or 1½ cup whole milk
2 eggs
¼ cup melted butter
1 teaspoon vanilla extract
Preheat oven to 325°.
In a small bowl, combine
1 cup sweet white rice flour
1 cup sugar
1 teaspoon baking powder
In a larger bowl, whisk together
13 oz can full-fat coconut milk or 1½ cup whole milk
2 eggs
¼ cup melted butter
1 teaspoon vanilla extract
Add the dry ingredients to the wet ingredients and mix well to combine.
Pour batter into an oiled 8x8-inch baking dish and bake until set, about 1 hour.
Let cool completely, then portion and remove from pan. Store chilled.
